Why is my sourdough bread flat and dense?
A flat, dense sourdough loaf almost always traces back to fermentation, but the fix isn't always "ferment longer." Check the starter before you blame the recipe
Allison starts where most flat loaves start: the starter. If it's sluggish, nothing downstream will save the bread. Her benchmark is that a healthy starter should double or triple within the timeframe you expect. If it isn't, feed it twice a day until it does. A starter that lives in the fridge will usually need three or four feeds to come back to full strength before a bake.
Only once starter health is genuinely dialed in does she move on to the next variable. That order matters, because people often adjust hydration or timing when the real problem is a tired culture.
For levain quantity, the episode's working numbers are around 20 percent levain, or roughly 10 percent prefermented flour. Use that as a baseline before changing anything else.

How long bulk fermentation should actually take
The most common cause of a dense loaf is underfermentation. Allison gives concrete targets: with a healthy starter, a country loaf should typically bulk ferment for three to four hours at a dough temperature around 77 to 78 degrees Fahrenheit. Colder dough takes longer. If your kitchen is cool, that's the first thing to fix.
The diagnostic is in the crumb. Cut an underfermented loaf open and you'll see large, elongated holes through the center, often with a tight, gummy crumb around them. That's tunneling, and it means the dough didn't get enough time or warmth.
Her advice for finding your limit is to push fermentation as far as you can, then walk back slowly, rather than pulling early and baking heavy bread over and over. After bulk, she gives a 20 to 30 minute pre-shape rest and 30 to 45 minutes or more in the basket before the dough goes into the refrigerator.

Dough that spreads instead of rising
Sometimes fermentation is fine and the loaf still flattens. Allison points to two handling causes.
First, hydration. The flour has to be hydrated in a way it can still support. If the dough is slack and spreading, drop hydration by two to three percent, or up to five percent in extreme cases, and see if the loaf holds its shape. Different flours absorb very different amounts of water.
Second, mixing and handling. Overworking dough in a mixer can heat it more than you realize and the dough can start to separate. On the bench, she asks bakers to avoid over-handling during pre-shape and final shape. Every extra fold and stretch degasses the dough and tears the structure you spent hours building.
A smaller detail from the episode: if you refrigerate uncovered dough, the surface can dry and produce a hard, chewy bottom crust. She'll let the dough chill for a few hours first, then go back and cover it.

The scoring and steam mistakes that flatten good dough
The episode's best lesson comes from a bakery day where identical batches of dough baked dramatically differently. The difference was scoring and steam.
One set of loaves was scored on the right third, almost on the side. The loaf couldn't support itself and collapsed toward the cut. Allison's rule is to score down the center third of the loaf, not too deep and not too shallow, and stay away from the outer thirds.
The other set was sprayed with water directly on the dough instead of around it. Wetting the surface stopped the loaves from opening up. Steam should fill the oven, not soak the crust. Spray around the loaves, or use a lidded pot or a tray of water, so the surface stays flexible long enough for the loaf to spring.
